Why glass instead of wood

Wood absorbs garlic, onion and the sour edge of a starter. It needs oiling, cannot go near a dishwasher, and splits if left wet. Tempered glass wipes clean, resists stains, and goes on the top rack. The one thing to avoid is thermal shock - never move a board from the fridge to a hot hob, and never pour boiling liquid onto a cold one.

Why an apron is not optional

Somewhere between the autolyse and the second set of folds you will be wearing flour. A tea towel in the waistband is not a plan. Look for coverage past the hip, adjustable neck straps so it fits over a hoodie in a cold kitchen, and a print you never iron directly.
